Nyonya Acar Fish

Nyonya Acar Fish or Acar Hu in Hokkien is a popular Peranakan pickled fish dish. This mouthwatering and super delicious fish, is a concoction of deep-fried fish pickled with a turmeric-vinegar base, spiced with garlic, ginger, and chilies.

Ingredients

  • 5 mackerel fish

  • 1 tsp salt

  • 1 cup cooking oil

  • 1 big knob ginger, peeled and jullienne cut

  • 5 small garlic cloves, peeled and sliced thinly

  • 20g turmeric root, sliced thinly

  • 2 fresh red chilies and 1 green chilli, sliced into pieces diagonally

  • 5 bird’s eye chilies

  • 1/2 cup cucumber matchsticks cut

  • 1/2 cup carrot matchsticks cut

  • Fish Seasoning
  • 1 tsp salt for

  • 1 tbsp turmeric powder

  • Gravy
  • 60ml canola oil

  • 100ml white vinegar (Heinz distilled white vinegar)

  • 4 tbsp white/brown sugar to taste

  • 1 tsp salt or to taste

  • 1 tsp turmeric powder

Directions

  • Clean the fish and drain.  Season fish with salt and turmeric deep fry until golden brown.  Set aside.
  • Using fried fish oil to fry the ginger until golden brown. Set aside.
  • Using the oil, sauté garlic and tumeric root.
  • Turn off the heat, add in chillies, vinegar, sugar and salt into same oil.  Stir until sugar dissolved.  
  • Add the some fried ginger, carrot, cucumber and lastly the fish to the mixture. Keep submerged in the vinegar mixture at least one hour before serving.
  • Garnishing with fried ginger and serve.
