Gin and Tonic No Bake Cheesecake

Gin & tonic and cheese cake lovers will be crazy over this, you can have the best of both worlds in the dessert of your dreams. This amazing boozy G&T cheesecake is easy to make at home with minimal tools, and best of all there’s no baking required. I like mine strong, so I skipped boiling the gin & tonic mixture to preserve the alcohol content. Have a Gintastic day!

Ingredients

  • Biscuit Base

  • 300 g Digestives

  • 150 g Unsalted Butter

  • Cheesecake Filling

  • 125 ml Gin

  • 125 ml Tonic Water

  • 75 g Caster Sugar

  • 3 tsp Gelatine Powder

  • 600 g Full Fat Cream Cheese

  • 300 ml Double Cream

  • 100 g Icing Sugar

  • Juice Half a Lime

  • Decoration

  • 2 tbsp Icing Sugar

  • Lime and lemon Zest

  • Lime and lemon Slices
