Mee Sotong Rebus

Mee rebus is one of the many noodles dishes popular in Malaysia. It is yellow noodles served with a thick spicy potato-based gravy and garnished with a hard-boiled egg, spring onions, fried shallots, tau kwa (dried/ fried beancurd) and bean sprouts. In my version, I’m adding chili squid (sotong) and replacing the tau kwa with prawn fritters (cucur udang).

Ingredients

  • Gravy
  • Blend (5 chilli, 5 bird chilli, 4 onions, 1 stalk of lemongrass, 2 pcs of galangal, 1 thumb size of turmeric , 1 thumb size of ginger,2 cloves of garlic,and 1/2 cup of dried shrimp)

  • Mixed powder (1 tbsp chilli powder, 1 tsp fennel powder, 1 tsp turmeric powder)

  • 3 mashed potato

  • 1 tbs assam tamarind paste – seeds removed

  • 2 tsp salt

  • 1 tbsp palm sugar

  • 1 Knorr beef/chicken stock cubes

  • 750ml water

  • Chilli squid
  • 100ml chilli paste (chilli giling)

  • 100g dried squid (soaked well)

  • 1 tbsp sugar

  • 1 tsp salt

  • Prawn Fritters
  • 300g prawns

  • 2 cups cabbage

  • 1 cup carrot

  • 1 stalk spring onion

  • 1 tsp oyster sauce

  • 2 shakes of white pepper

  • 1 egg white

  • 1 tsp of turmeric powder

  • 50ml water

  • Garnishings
  • Hard-boiled eggs

  • Potato

  • Spring onions

  • Fried shallots

  • Bean sprouts

  • Grounded peanuts

  • Egg noodles and vermicelli
