Asian Fusion Seafood Risotto

Don’t we all love Risotto? I’m giving the traditional recipe a little Asian twist by incorporating Soju (replacing dry white wine) and Ebikko in the cooking process. Turns out awesome!

Ingredients

  • 1.5 cups arborio rice

  • 6 cups chicken stock

  • 4 shots korean soju

  • 1/2 cup chopped onions

  • 6 garlic cloves, minced

  • 2 cups baby spinach

  • Half lemon

  • Seafood
  • 1 big octopus (400g)

  • 6 uncooked white shrimp, peeled, deveined, tails and head left intact

  • 2 fresh oysters

  • 5 tables spoon (optional)

  • Garnish
  • 2 wedges lemon

  • 3 sprigs of parsley, chopped
