Asian Fusion Seafood Risotto
Don’t we all love Risotto? I’m giving the traditional recipe a little Asian twist by incorporating Soju (replacing dry white wine) and Ebikko in the cooking process. Turns out awesome!
Ingredients
1.5 cups arborio rice
6 cups chicken stock
4 shots korean soju
1/2 cup chopped onions
6 garlic cloves, minced
2 cups baby spinach
Half lemon
- Seafood
1 big octopus (400g)
6 uncooked white shrimp, peeled, deveined, tails and head left intact
2 fresh oysters
5 tables spoon (optional)
- Garnish
2 wedges lemon
3 sprigs of parsley, chopped
