Like many Penangites, I’m a big fan of Laksa. There are many versions of Laksa in Malaysia but in Penang, there two popular versions, i.e. Asam Laksa and Siam Laksa. Siam Laksa also known as Laksa Lemak or Siamese Laksa is the creamier version of Asam Laksa but less spicy and tangy. Both are made with basically the same ingredients, except that the Siam Laksa is coconut milk based. Let me know in the comments below which is your favourite? Penang Asam Laksa or Siam Laksa?

Ingredients

  • 5 mackerel fish

  • 1 small can Sardin fish

  • 1L water

  • 5 pieces asam keping, peeled tamarind

  • 1 bunch daun kesom/daun laksa

  • 5 kaffir lime leave

  • 1 box coconut milk (330ml)

  • laksa noodles

  • Spice Paste:
  • 10dried red chilies

  • 4 freshs red chilies

  • 2 tbsp chili boh

  • 8 small shallot

  • 1 inch fresh turmeric

  • 1 inch galangal

  • 1 tbsp belacan

  • 5 candlenuts

  • 2 stalks lemongrass

  • Tamarind Juice:
  • tamarind, about golf ball size

  • 1/2 cup water

  • Seasonings:

  • 2 tsp salt or to taste

  • 2 tbsp sugar or to taste

  • Garnishing:
  • 1 cucumber, julienned

  • 1 bunch mint leaves, use only the leaves

  • 1 bungan kantan/torch ginger flower, cut into small pieces

  • 3 calamansi

  • 5 kaffir lime leaves, sliced thinly

  • 1 red onion, sliced thinly

  • 1 lettuce, thinly cut

  • 1 red chili/3-4 bird’s eye chilies, cut into small slices

  • 1 small pineapple, cut into short strips

  • Condiment:
  • Heh Ko/Prawn Paste
