Ingredients

  • 1cup button mushrooms, sliced

  • 2 cups king oyster mushrooms, halved and sliced

  • 1L chicken stock (or vegetable)

  • 30g unsalted butter

  • 2-3 tbsp olive oil

  • 1 onion, finely chopped

  • 1/2 garlic, crushed

  • Zest, 1/2 lemon

  • 2 cups arborio rice

  • 1/2 cup Parmesan, grated

  • 4 slices Prosciutto, chopped

  • 2 cups of spinach

  • Salt and pepper to taste

  • Optional: Black Truffle pate
