minutesLap mei fan, also known as Chinese waxed meat rice, is a delicious traditional dish typically enjoyed during the Chinese New Year.
Ingredients
– 3 cups of short grain rice
– 3 cups of water
– Assorted Chinese waxed meats (lap cheong (pork, chicken), yun cheong, duck leg)
– 4 cloves of garlic, minced
– 1 thumb size ginger, sliced
-10 pcs dried scallop soaked in 1 small cap shao xing wine
– Green onions, chopped (for garnish)
– few dashes of white pepper
Sauce:
– 2 1/2 tablespoons of soy sauce
– 1 tablespoon of abalone or oyster sauce
– 1 tablespoon of dark soy sauce
– 1 teaspoon of sugar
– 1 teaspoon garlic oil
– 1 tablespoon of sesame oil
Garnish:
– Green onions, chopped (for garnish)
– few dashes of white pepper
– fried pork lard (optional)
– fried garlic oil
