Lap mei fan, also known as Chinese waxed meat rice, is a delicious traditional dish typically enjoyed during the Chinese New Year.

Ingredients

  • – 3 cups of short grain rice

  • – 3 cups of water

  • – Assorted Chinese waxed meats (lap cheong (pork, chicken), yun cheong, duck leg)

  • – 4 cloves of garlic, minced

  • – 1 thumb size ginger, sliced

  • -10 pcs dried scallop soaked in 1 small cap shao xing wine

  • – Green onions, chopped (for garnish)

  • – few dashes of white pepper

  • Sauce:

  • – 2 1/2 tablespoons of soy sauce

  • – 1 tablespoon of abalone or oyster sauce

  • – 1 tablespoon of dark soy sauce

  • – 1 teaspoon of sugar

  • – 1 teaspoon garlic oil

  • – 1 tablespoon of sesame oil

  • Garnish:

  • – Green onions, chopped (for garnish)

  • – few dashes of white pepper

  • – fried pork lard (optional)

  • – fried garlic oil
