Saffron Seafood Risotto Recipe
This seafood risotto recipe is infused with saffron and white wine, imparting remarkable flavour into the risotto rice base. I use scallops, prawns and squid to make up the risotto but you can use whatever seafood that is in season and you like. This risotto is easy to make and makes for the perfect meal for family and friends.
Ingredients
8 cups chicken stock
1/2 teaspoon saffron threads
1/2 cup chopped onions
1.5 cups arborio rice
4 garlic cloves, minced
2 cups dry white wine
3 medium-sized squid, chopped
4 scallops
8 uncooked large shrimp, peeled, deveined, tails and head left intact
1/2 lemon
3 sprigs of parsley, chopped
