Thai Pineapple Fried Rice (Khao Pad Sapparod)
Thai pineapple fried rice is a refreshing twist to our usual fried rice served in a pineapple bowl. It has the lovely flavor of pineapple with a slight curry taste, and is the perfect combination of sweet, tangy and savory. In my version, I’m using shrimps and squid to make it that more irresistible. To make even more amazing, use Thai fragrant rice (I’m using basmati rice).
Ingredients
4 Shrimps (leave 2 whole, and 2 cut into small pieces)
2 squids (cleaned and sliced)
1 cup fresh pineapple cubes
1 egg
300g of cooked rice
half onion (diced)
5 cloves (minced)
1/2 cup vegetable oil
- Seasoning
2 tbsp oyster sauce
2 tbsp fish sauce
1 tbsp soy sauce
1 tsp fish curry powder
2 shakes white pepper
- Others
1/2 cup raisins
1/2 cup roasted cashew nuts
1 cup baby spinach (optional)
1 red chili, sliced thinly
2 stalks coriander
