Ingredients
1 kg pig’s trotter (front leg), chopped
2 tbsp coarse salt (for cleaning)
2 litres water (for boiling)
750 ml black sweet rice vinegar (1 bottle)
750 ml water (use the vinegar bottle to measure)
1 head garlic
230g old ginger
250g young ginger
3 tbsp sesame oil
80g gula melaka (coconut palm sugar) or brown sugar
4 hard-boiled eggs, deshelled
Salt (season to taste, optional)
Directions
- Clean and blanch the pig’s trotters.
- Fry ginger with sesame oil until aromatic.
- Add black vinegar, water, garlic, and gula melaka.
- Simmer the trotters until tender.
- Add boiled eggs and let them soak up the flavors.
- Adjust seasoning to taste and serve!
