Ingredients

  • 1 kg pig’s trotter (front leg), chopped

  • 2 tbsp coarse salt (for cleaning)

  • 2 litres water (for boiling)

  • 750 ml black sweet rice vinegar (1 bottle)

  • 750 ml water (use the vinegar bottle to measure)

  • 1 head garlic

  • 230g old ginger

  • 250g young ginger

  • 3 tbsp sesame oil

  • 80g gula melaka (coconut palm sugar) or brown sugar

  • 4 hard-boiled eggs, deshelled

  • Salt (season to taste, optional)

Directions

  • Clean and blanch the pig’s trotters.
  • Fry ginger with sesame oil until aromatic.
  • Add black vinegar, water, garlic, and gula melaka.
  • Simmer the trotters until tender.
  • Add boiled eggs and let them soak up the flavors.
  • Adjust seasoning to taste and serve!
