Ingredients
1cup button mushrooms, sliced
2 cups king oyster mushrooms, halved and sliced
1L chicken stock (or vegetable)
30g unsalted butter
2-3 tbsp olive oil
1 onion, finely chopped
1/2 garlic, crushed
Zest, 1/2 lemon
2 cups arborio rice
1/2 cup Parmesan, grated
4 slices Prosciutto, chopped
2 cups of spinach
Salt and pepper to taste
Optional: Black Truffle pate
