Savory Steamed Pumpkin Kuih

Savory steamed pumpkin kuih is a Hokkien snack that is more popularly known as Kim Kuah Kuih 金瓜糕 or Kuih Labu. Its main ingredients are pumpkin, rice flour and dried prawns. It is similar in texture to the Or Kuih (Yam Kuih) and best taken with chili dipping sauce.

Ingredients

  • Batter
  • 200g rice flour

  • 50g tapioca flour

  • 520ml chicken stock or water

  • Ingredients
  • 400g pumpkin, shredded

  • 2 pieces Chinese sausage (lap cheong), skin removed and diced

  • 3 dried Chinese mushrooms, soaked until soft and diced

  • 5 shallots, sliced

  • 5 cloves garlic, chopped

  • 2 tbsp dried prawns, soaked and finely chopped

  • 3 tbsp oil

  • Seasoning
  • 2 or 3 dashes pepper

  • 2 tsp salt or to taste

  • Garnishing
  • Some chopped spring onion and sliced red chillies
